Turnip Report

I've had various broccoli and rice casseroles, but the actual recipe is a mystery to me. My first attempt was too salty: http://www.food.com/recipe/no-cheese-whiz-broccoli-rice-casserole-105080

Next I'll try swapping one can mushroom soup for evaporated milk:

Microwave until cooked:
1 lg. head broccoli, chopped
1 sm. onion, chopped.

Stir in:
8 oz grated cheddar cheese
2c cooked rice (1/2 c brown rice, 1 c veggie broth, 1 T butter)
1 10.75 oz. can Campbell's mushroom soup
1 can evaporated milk
grated black pepper

Cover with bread crumbs.

Bake uncovered in a 2 qt casserole at 350 for 1 hour.
