Winter farmshare

I've got 1/3 of a winter farm share now. Unless there's an unexpected demand for it, I won't bore you with potato soup recipes, but I will try to share what I do with the butternut squash (some of which is starting to get funny spots, so I'd better do *something*!)

I also had a lot of success with a frittata-thing yesterday. It didn't even need ketchup!

Dice and microwave 2 potatoes for 6 minutes, stirring occasionally.
Add 2 small zucchini, chopped, and microwave for 3 minutes more.
Stir in ~1/2 c. milk, 1 c. grated swiss cheese, 2 T parmesan cheese, 1 t. toasted dried onion, 1/2 t. salt, seasoning (I used French four).
Stir in 3 eggs.

Bake in greased pie plate for 1 hour at 325, followed by 10 minutes at 350.

Too much squash

Four itty bitty cutsie little butternut squash produce 6 cups diced squash, even after you cut the bad bits out. Also, leftover cream cheese.
