Turnip Report

Farm share starts next Thursday! Until then, here's a recipe I've adapted. I think I'll swap the red pepper for a large tomato when I do it again.

Summer Vegetable Strata
Based on http://athomeatsea.com/2010/07/23/cook-the-book-summer-vegetable-strata/

Lightly butter the shallow Corningware oval pan.

Cut three or four slices of bread to fit its bottom.

In 2T olive oil, sautee an onion with some vegetables (e.g. 1 zucchini, 1 red pepper), pepper and basil. Spread over top of bread.

Beat together 2 eggs, 1c milk, 1/3 t salt, 2T parmesan. Pour over veggies and bread.

Sprinkle with more parmesan.

Bake 40-45 minutes at 350 degrees. Cool 5 minutes before serving.

Edited: Fixed the farmshare day. Also, I think it would taste better with a little more salt and with a tomato in place of the red pepper. The most important thing to get right is to have enough liquid to completely saturate the bread.
