Turnip Report

I have a craving for eggplant Parmesan, but heck if I'm going to bread and fry an eggplant. Let's try for an eggplant casserole instead:

Slice into 1/4 inch rounds

1 eggplant

Season with
salt
pepper

Let sit 10 minutes.

Brown both sides in olive oil.

Arrange in alternating layers in oiled casserole dish with

2 medium tomatoes, sliced

Season with

dried onion flakes
salt
pepper
Basalmic vinegar

Cover with

wheat germ

Top with

sliced fresh mozzarella

Cover and bake for 30-35 minutes at 350 degrees.

Edit: I have no idea how the authors of the original recipe managed this without burning down their kitchen. I had to add olive oil repeatedly to keep the smoke detector from going off while browning the eggplant. Also, I didn't need a very deep casserole; perhaps I should use the small one next time?

Another Edit: I could name this dish "Basalmic Mozzarella Leather With Vegetable Mush". Too much vinegar, and the mozzarella melted and bubbled and spread into a thin layer. It was tasty. I ate it over fresh tomato bread.
