Baked egg thing

I uniformly waited too long to eat my salads, so the lettuce ended up as a tasty leaf marinade. I used oil and vinegar because I ran out of vinagrette. Tired of lettuce now.
The eggplant became baba ganoush again. The skinny little eggplants don't need to cook nearly as long as the big chubby ones. I think the flaw in my recipe has been that I'm not adding enough lemon juice.
I used the broccoli and yellow pepper (and some pinto beans and dried onions) in a potato and egg thing. The leftovers are very good with ketchup.
Baked Egg Thing
Dice 2 potatoes, microwave for 5 mins
If desired, add & cook veggies
Stir in 1/2 c milk
Stir in 1 c cheese
Season to taste
Beat in 3 eggs
Bake 40-45 minutes at 350 degrees in a buttered pie plate. Serve hot.
