More turnip pie
Mar. 28th, 2010 02:29 pmWell, it might not have been a turnip. But it was some sort of root that sprouts leafy bits off its top rather than eyes off its middle, it was white on the inside (whiter than the parsnip) and it came from the same place the turnips came from. So, acting under the assumption that it was a turnip...
Coarsely chop one medium (size of a large-ish potato) turnip and one parsnip. Microwave with ~1c water for 5 min.
Coarsely chop one small onion and one medium potato. Mix with turnip and parsnip, microwave 5 min.
Mash.
Mix in 1c grated smoked cheddar (man, that stuff is good!), 1 egg, ~1/2 tsp salt, pepper.
Spread in small baking dish, cover with a layer of wheat germ.
Bake at 350 for 1 hour.
Edit: Browned up very nicely, tastes ok. Stir well so you don't get parsnip tasting chunks.
