Dec. 31st, 2011 12:58 pmI think I've cooked all the farm share vegetables except a few potatoes. I declare victory.
Chef Annie's root soup recipe was instrumental:

I substituted brown potatoes for red, parsnips for sweet potatoes, and used only 4 c. broth. It's an unfortunate shade of brown right now and a bit too salty, but I still have hopes that it will turn out ok. Once again, the beet broth lost its color after a bit of cooking.
The last two beets, some of the Thanksgiving celery (frozen), some frozen corn, the little farmshare onion I kept forgetting to use when it would be truly appreciated, and a bunch of other stuff is becoming more broth right now. I need to remember not to buy large bags of frozen corn. It's good in tomato soup, but I seldom make that since starting the farm share.
Organic baby spinach keeps as well as I remembered it keeping. Perhaps tomorrow I'll reward myself with a spinach lasagne. I've been looking forward to one since I decided against the winter farmshare!
