Jun. 30th, 2012 09:17 amI want to do something with cabbage, tomato and rice. And today is going to be very hot.
I'll probably check proportions against the Spanish rice recipe in The Tao of Cooking (and maybe against my vegetarian stuffed cabbage recipe, except I don't really want mint and nuts in this) and then throw together something like this:

Ok, here's what I did. We'll see how it turns out.
sautee until onions are translucent:
1 onion
2 cloves garlic
3 T olive oil
add and sautee ~3 min more:
1/2 c brown rice
3/2 c arborio rice
combine in crockpot on low heat with:
5/2 c shredded Chinese cabbage
28 oz fire roasted crushed tomatos
2 c beet broth
1 small zucchini
1 t salt
ground black pepper
Edit: Not a crock pot recipe, but did fine in a regular pot.
