One reviewer seemed to think this was a great recipe, except for what fennel tastes like. Given my reaction to the smell, I expect to feel the same way. Perhaps adding extra salt and pepper will help.
I'm not sure about preheating the roasting pans, especially when I'm roasting as long as 40 minutes. Also, my oven only has one rack and I only have one bulb of fennel, so I'm skipping a lot of the swapping around and roasting everything in the same pan.
Edit: It was yummy! The fennel was small and the shallots were large, and I didn't eat the frondy bits. I also overcooked it, but charcoal doesn't taste very bad and caramelized anything tastes pretty good.
