I think the napa cabbage proved that boiling is necessary to get enough liquid out to make cabbage pierogi filling. At least I now have a reason beyond leeching flavor and nutrients!
The kohlrabi leaves and collards will go in the pot after I fish the cabbage out, then I'll make broth of whatever's left of the fennel stalks and some other stuff.
The kohlrabi bulbs get to be soup! I may throw in some potatoes and thyme -- this recipe looks nicer, but also like a real pain to follow.
