Sep. 3rd, 2014 08:11 pmTo every farmshare there comes a time when the produce in the farmshare match the ingredient list in ratatouille. Here, that time was yesterday. I don't know what the buddy I'm splitting with is going to do with ingredients for 4 gallons of ratatouille; the batch in my pot now should be all I need for a year.
The green stuff that tasted a little like a cross between bok choi and horse radish, and which had flowers reminiscent of broccoli, has been boiled and pureed along with the beet greens. Someday it will be green stuff paneer. The food processor does a much better job of pureeing than the wand blender.
Edit: In the end I only got 6 cups of ratatouille, but it looked like a lot early on!
