Sep. 20th, 2014 11:52 amI've declared this weekend to be a holiday -- I'm being appallingly self-indulgent.
More of the mysterious green stuff and what was probably some kale became saag paneer yesterday. Alas, I didn't complete my plan to make cheesy potato soup. Also, the carbon monoxide alarm went off. I hope that's due to the alarm being old and not to the stove being old. (It was the first day cool enough that I wanted all the windows closed, and I spent a while boiling down the water I cooked the greens in. I opened the windows when the alarm went off, and by the time the fire department got here they couldn't detect any poison gas.)
Today I experimented with the beet bread recipe -- I used about 50% whole wheat flour, 2/3 the sugar, 1/2 tsp orange extract, 1 tsp cinnamon, 1/4 c. chocolate chips and canola oil in place of butter in a buttered pan. It cooked for about 50 minutes, not 38-40.
I also baked more vegetable mush in a hand made stoneware casserole dish. This time I put Parmesan cheese over the crumbs and it's much prettier.
Dinner tonight will be leftover paneer tikka masala on no-knead sourdough bread. (I don't sign up for farm share because I'm a rabid vegetable eating fiend; I do it because without an imperative to eat vegetables I end up eating cheese in cream sauce, extra cheese pizza, and mac-n-cheese.)
Edit: The orange extract is a huge improvement in the beet bread -- I'm no longer left wondering why my chocolate cake tastes like beets. I do miss the butter, but the nutritional advantages might be worth the loss. I like the texture added by the whole wheat flour.
The casserole didn't heat up as fast as the pyrex baking dish, or the vegetables were layered too thickly, so the onions are still crunchy and the flavors didn't blend. I stuck the whole mess in the microwave for 6 minutes and we'll see if that helped.
