Eggplant Fennel Sludge

Cube and salt:
2 med. eggplant
let drain.
Thinly slice:
1 large onion
4 bulbs fennel
2 cloves garlic
Sautee until onion clears and starts to brown (~20 min) in:
3T olive oil
1 t thyme
1/2 t red pepper flakes
ground black pepper
Add:
eggplant
cook 5 minutes
Add:
large can tomatoes
Simmer 15 minutes or until eggplant goes soft.
Mix:
1/2 c parmesan cheese
1/2 c bread crumbs
Sprinkle over top of sludge.
Bake uncovered for 30 minutes at 425.
