Jan. 18th, 2021 01:35 pmThe impossible glut of root vegetables has abated, and I'm starting to see space in the fridge and freezer again. Brookford has started sending out frozen summer vegetables in the shares, and I plan to start up again if I can get this under control over the next few weeks.
Sadly, half my beets turned out to be radish infiltrators. They're still spicy roasted; I'll try smothering those in cheese once they come out of the freezer.
Half of the actual beets became beet latkes. This is the best of many recipes I've found, though I've finally upped my latke game from worrying about burning down the kitchen to being picky about flavoring and texture. Next time, less pepper. Maybe some thyme.

After successfully frying the latkes (!) the leftover oil turned right around to brown the paneer in my favorite saag recipe (which may or may not have contained spinach this week).
