mathhobbitThe internet is a wonderful place. I know how I'm getting rid of that beet in my fridge. This beet is as big as a grapefruit. Did I mention I'm scared of beets?

Edit: I chopped up the beet (the knife got stuck and I had to use a second knife to cut it out) and put it through the Cuisinart. I now have 8 cups of shredded beets. *Eight Cups*. I could make five times this recipe. Jeepers.
