Sweet potato muffins also do well with pecans and/or brown sugar and/or warm spices, IMO. Nom!

I'm not sure what spices I'd use with parsnips, but they're certainly sweet enough for muffins.

IME cooked mashed carrot, sugar pumpkin, butternut, and sweet potato are all close enough in moisture and fiber and sugar content to be interchangeable in recipes if you're good with their flavor differences. (Sugar might need tweaking if you're particular about that, or have a notably unsweet pumpkin.) The pumpkin gingerbread cake will probably work just fine with sweet potato.
