More soup!

mathhobbitI went camping last weekend, so didn't get my veggies. So, when I brought this week's share to ![[livejournal.com profile]](https://www.dreamwidth.org/img/external/lj-userinfo.gif)
chenoameg, I cleared some of the older veggies out of her fridge. These included more yellow and green squash, which I plan to puree into a cream soup, and three bunches of beets, which will become borscht.
I've also got two cucumbers, two tomatoes, lettuce, carrots, a two week old cabbage, and some sort of frilly light green leaves. There will be some salad, possibly a carrot cake (with orange flavored icing rather than vanilla this time), and probably another greens and rice bake (if the weather's cool enough).
Edit: I have an eggplant too. Does anyone have a really good recipe for Baba Ganoushj?
