Turnip pie, take 2
Mar. 11th, 2010 01:18 pmThe turnip pie turned out to be extremely filling and also tasty, so I'm trying another. Here are my notes:
Put about 2q salted water on the stove to boil.
Coarsely chop and add:
1 turnip, larger than a grapefruit
1 large carrot
Boil 15 or 20 minutes (25 minutes total wasn't enough for the turnip)
Chop and add:
1 onion (I didn't chop fine enough)
Wait another 5 or 10 minutes.
Add an apple, cut in eighths.
Boil 5 more minutes then drain thoroughly and mash.
Add:
2 eggs
1 or 2 tsp dried parsely
1/2 tsp salt
black pepper
4.5 oz grated smoked cheddar
Stir, put in a buttered pie plate, cover with breadcrumbs.
Bake 1 hour at 325.
Edit: Next time, more cheese. It's still pretty crumbly, so the eggs may or may not be doing any good.
