Jul. 30th, 2012 05:58 pmI remembered I can make borscht out of cabbage and beets, so I'm left with some carrots, some cucumber, and some squash. Here's the plan for the squash (note that I already have sour cream for the borscht!)

Edit: very ... creamy. If I ever make this again I'll add some spices from another recipe -- maybe white pepper and nutmeg?
