Jun. 3rd, 2013 05:16 pmFarm share starts next Thursday! Until then, here's a recipe I've adapted. I think I'll swap the red pepper for a large tomato when I do it again.
Summer Vegetable Strata

Lightly butter the shallow Corningware oval pan.
Cut three or four slices of bread to fit its bottom.
In 2T olive oil, sautee an onion with some vegetables (e.g. 1 zucchini, 1 red pepper), pepper and basil. Spread over top of bread.
Beat together 2 eggs, 1c milk, 1/3 t salt, 2T parmesan. Pour over veggies and bread.
Sprinkle with more parmesan.
Bake 40-45 minutes at 350 degrees. Cool 5 minutes before serving.
Edited: Fixed the farmshare day. Also, I think it would taste better with a little more salt and with a tomato in place of the red pepper. The most important thing to get right is to have enough liquid to completely saturate the bread.
