Jul. 9th, 2013 01:48 pmWe encountered two different ways to use up stale bread in Italy, and I have a pointer to a third. This bread stew is fairly delicious, though I wish I hadn't added that overly stale white roll. It's not really called "tomato pope" in Italian; that's just a plausible misspelling.
Tomato Pope

Sautee:
1 onion
1 clove garlic
in:
~3T olive oil.
Add:
~1t basil
~1/2 t red pepper flakes
~1/4 t black pepper
Once the onion is soft, add:
1 large can crushed tomatoes
Stir in:
1/2 c red wine
1/3 loaf stale bread, cubed
enough water to make it a little soupy
Stir over low heat until it thickens.
