I made a bunch of modifications to this recipe and ended up with a perfectly respectable vegetarian chili. I'm guessing you can add tomatillos after the onions in any of your favorite chili recipes and it will turn out fine, and your tomatillos will be gone.

By the way, tomatillos are surprisingly unlike tomatoes.

The beet greens are pureed, but I just can't cope with the beets right now. I have ingredients for more squash soup but it'll be a challenge to store it.
