Turnip report

I've given up on winter farmshares, but I'm close to the winter farmer's market. Here's what I'm doing to my dried limabeans:

I substituted thyme for sage. I'm suspicious of a bean recipe with no fat, but I can't exactly throw a ham bone into a vegetarian meal.

A drizzle of olive oil at serving time? Or a spoonful of sourcream or sprinkle of grated cheese? Or you could sautee the veggies in the fat of your choice before assembling the soup, but that complicates an otherwise simple crockpot recipe.

Olive oil provides neither salt nor umami. How about mushrooms sauteed in butter with some salt and sherry as a topping/addendum? :)

A little rebalancing next time, then? Not a lot going on there beyond the alliums until you get to the vegetable broth.

Beef, really, not chicken? Huh. I usually think of beef broth as more fuss for less flavor than chicken broth.
