What are white kidney beans? I ended up with pinto beans, because I'm not yet convinced that the difference matters.

White kidney beans are also called cannellini; they're about the same size and shape as red or pink kidney beans, and related. One reference I found said they have a firm texture and skin.
Beans vary in size, color, cooking time, cooked texture, and flavor, which change the assembly and aesthetics of the finished dish. Some substitutions work fine; some not so much. You can make something like hummus with beans other than chick peas, but it's not the same. sauergeek uses black beans by default, but I'm not fond of their color in some dishes. Baked beans don't work well with a bean that falls apart readily. I don't know what aesthetic this recipe was aiming for.

Yup, the pinto beans take longer to cook. But they're pretty inoffensive compared to the heirloom lima beans, so this batch is already tastier than the last.

The lima beans did mellow out after I froze them with a little cheddar.
