Hm, I've just come into possession of an unexpected kohlrabi and some reputedly-hot daikon. I'm tempted to lift your experiment (though not until later this weekend). :)

I added a little flour and some black pepper to the recipe, which I think helped. Overall, much eggier and insubstantial than beet latkes.

One of my cookbook latke/fritter recipes has an annotation (by me) saying something like, "NO! MORE FLOUR IS THE WAY!"
