I've come to peace with the fact that fennel is a large amount of compost attached to a small amount of food.  I now have a casserole and another year's supply of pesto.

The parsley may or may not survive to become tabouleh salad.  Either way, I no longer have a giant bag of greenery cluttering up my fridge.  Eventually I'll chop and roast the parsnips with onions, potatoes, and maybe some carrots.  And next year, I'll presumably have a completely different assortment of vegetables to adapt to.

It might just be a side effect of finding a good saag recipe, but I feel like this one had more carrots and less kale than the last one.

Carrots keep well and roast well and go in all sorts of things, though. Or is the complaint the shortage of kale?

Shortage of kale is never a problem. :)

Change is hard!

I think of it as more green beans and less lettuce and kohlrabi. Which I'll miss, as green beans are pretty clearly superior to lettuce and kohlrabi.

Green beans are rather more work to harvest, IIRC.
