Turnip report

I have to try this blender carrot cake.  How could something with this much oil in it be bad???

That's not too far off proportion-wise from the two-loaves-of-pumpkin-bread recipe that's one of my basic quickbreads. Lower on flour, a little lower on sugar, no spices. I usually make it with 2/3 or 1/2 the oil, though. At a cup of oil, picking it up leaves my fingers greasy. Below half a cup of oil, the spices get a bit harsh. Frosted cake is plate-and-fork food, though, not finger food, so my complaint may be irrelevant.

There are smaller (one quickbread loaf) bundt pans, or it'd probably work in an 8' or 9' round pan, or as muffins?

I own two of the smaller bundt pans. You'd be welcome to borrow one. They're fun, but a bit annoying to grease.

"Cake in a mug" has ~always been a microwave thing when I've seen it, which takes different recipe tuning. Ceramic and glass baking pans exist, though. Ceramic mugs might be fine in the oven, but be careful about thermal shock and don't use your favorite mug. :}

That sounds perfect!
